Don't you hate it when you're looking for a sirloin and all you can find are t-bone and porterhouse?

SpearmintFur: I've never had a porterhouse or t-bone steak in my life.  
 
Most of my life, the steak I had was what I think was a sirlon that was usually as tough as leather that my mom made. Lately though, she's improved and her steaks are pretty decent.  
 
Man, someday, I'm going to treat myself to a fancy steak at a steakhouse of sorts, with one of those porterhouse or t-bone steaks. Mmm-mmm.

Sounds more like round steak to me. Only meant to be cut into small pieces across the grain. The steak you choose makes a huge, huge difference. Not all steaks are created equal!  
 
Overcooking can create a tough steak too, of course.
